Grape variety: Primitivo 100% Production area: Marchione district, Conversano (BA), Puglia – Italy Type of soil: calcareous and clayey on hilly reliefs Training system: sapling Yield per plant: approximately 1 to 4 kg Year of planting: 1990 Harvest: hand-picked from company-produced grapes in the first ten days of September Vinification: in the cellar the grapes are still carefully selected, then pressed, destemmed and sent to the winemakers. The alcoholic fermentation on the skins allows the extraction of all the valuable substances contained in them: from the fruitiness to the polyphenols to the tannins. Each step takes place at a controlled temperature. Once the marc is separated, the wine goes into steel tanks Aging: slowly in 50 hl second passage Slavonian oak barrels, for a period of approximately 12 months Annual production: approximately 30,000 bottles Serving temperature: 18-20° C
