Grape varieties:Mainly Chardonnay with native white grape varieties.
Area:San Marzano, Salento, Puglia. About 100 meters above sea level.
Winemaking:The grapes are destemmed and left in cryomaceration for a few hours. The next phase is the soft pressing of the marc followed by a cold static decantation so that it occurs naturally. The alcoholic fermentation takes place in French oak barrels.
Alcohol content:14%
Pairings:Appetizers, fish-based first courses, cheeses.

Serving temperature:12-14 °C.
