Grape variety:Negroamaro.
Area:San Marzano, Salento, Puglia. About 100 meters above sea level.
Winemaking:A soft cold pressing of the grapes is carried out on a part of the mass, while the remaining part is drained of the must 12-24 hours after the start of maceration. The musts thus obtained are combined and fermented in steel at 11 °C with selected yeasts.
Alcohol content:12%
Pairings:Italian appetizers, fish soups, fish in foil or baked, young or slightly aged cheeses.

Serving temperature:12-14 °C.
